Moroccan Grilled Liver Kebabs

Liver Kebabs

When I'm looking at which foods have the highest concentrations of nutrients and the widest range of nutrients, nothing rivals eggs and liver. I often recommend eggs about five days a week and lambs fry (liver) once or twice a week.

Many people are averse to liver. It comes down to how it is prepared. When it is prepared following a good recipe, it is delicious and exceptionally nutritious.

"Liver kebabs or skewers (kouah) are one of the most common street foods in Morocco. They’re available in practically every weekly souk and are a staple at many grill joints, vendor stands and restaurants throughout the country. This is actually one of our favourite fast food options if we are in a hurry or if we crave a takeaway meal."
